Located in Castiglione Falletto, Cavallotto is one of Barolo’s most fabled estates, farming Nebbiolo since 1929 and bottling their own wine since 1948. They own one of Barolo’s few monopoles, Bricco Boschis. Bricco Boschis is an incredible vineyard site, a steep amphitheater with some rolling contours and spines intermixed, perfectly orientated. Viticulture is certified organic. Today, brothers Alfio and Giuseppe Cavallotto are the fifth generation to farm the estate and make the wines. Cavallotto is a classical (old school) estate that ferments the wine on the skins for 30+ days and ages them slowly, 48 to 60 months in large Slavonian oak cask. They are some of the latest released wines of each vintage and among the longest lived.

Organic. 100% Nebbiolo sourced from three parcels on the hillside: Colle Sudovest, Punta Marcello and San Giuseppe. Ageing/Vinification: fermented with indigenous yeasts, macerated with submerged cap for 20 to 35 days. Traditional ageing in Slavonian Oak Casks for 3 to 3.5 years. bottle aged 6 to 12 months before release.

Earthy and smoky, it has dark cherry and blood orange aromas alongside plenty of dried fruits. There’s firm acidity to the fore, as well as firm tannins, with great midpalate extraction. There’s ome stickiness on the gums now so it comes across as very austere at the moment, but it’s very good on the finish.
