Vincent Carême - Vouvray Sec
Vincent Carême made his first bottle of Vouvray, aged 14, under the watchful eye of his grandfather. After studying viticulture at Lycée Viticole d’Amboise, Vincent worked a number of harvests throughout various wine regions in France and South Africa where he met his wife, Tania. He then started his own estate in 1999, with only five hectares he inherited from the family.The estate covers 17 hectares in Vouvray, working only with Chenin Blanc, in all its variations: sparkling wine, dry, semi-dry and sweet.
The vines, planted on clay-limestone and flint clay soils, have been certified organic since 2007 and the harvest is all manual. The use of sulphites is judicious and no other inputs, or interventionist techniques are used. The wines are aged in 400-liter barrels, most of them a few years old, in an old troglodyte cellar hand-dug out of tufa, a limestone rock characteristic of the region.
Organic. 100% chenin blanc (45 year old vines).Hand harvested. indigenous yeasts. Fermented in 400l used French oak barrels and aged for nine months.
Certified Organic. Peach, fleshy nectarine and melon flavors show a refined form and poise, thanks to steely acidity. Veering austere, this is the product of a cool vintage, with a slightly oily texture and flecked with chamomile and crushed rock notes through the close.
